Chondrus crispus is a red alga which contains carrageenans (texturing fibers found in the cell walls of the alga).

Description of Irish moss
From a temperature of 70°C, carrageenans become soluble and extract themselves from the alga. These molecules, with a negative electrostatic charge, attract positively charged proteins, tannins and other residues. Carrageenans then form clusters with these particles and precipitate during cooling. The beer is thus clarified.
Applications
Irish moss flakes are added in the last 10-15 minutes of boiling. Irish moss is a natural ingredient that is neutral in taste and smell and available in an organic version. It can be integrated into Vegan beer formulas.
