Description
The Fucus vesiculosus and Fucus serratus algae are commonly known as goemon or kelp. They belong to the brown algae family and can grow up to 1 m long. These algae colonize the rocks located on the foreshore in both sheltered and agitated areas. They are harvested throughout the year in the northern part of Brittany, France.

Composition
With their high content of dietary fiber, but also minerals and vitamins, and their low amount of lipids, macroalgae Fucus spp. are very interesting from a nutritional point of view.
